青岛家常烧

青岛家常烧是老婆大人在青岛的时候学的一道菜，到了厦门以后这边的海鱼种类更多，长的也更漂亮，这道菜也得到了大大的发扬。
原料：海鱼，看大小，一般两个人的话两三只就好
香料一：大料（八角），如果是我做的话我还会加花椒和辣椒
香料二：蒜，姜
调料：酱油，盐
做法：
1. 把香料一洗净用清水泡好，水的量基本就是倒在锅里刚刚淹过鱼就好，差不多就是一碗
2. 把鱼洗净，两面各横切两刀
3. 炒锅，烧油，把蒜和姜在油里过一下，出香味
4. 把香料一和泡的水一起倒入锅内
5. 不用等水开，把鱼放入锅中摆好。依各人口味加盐和酱油，盖上盖用小火慢慢烧
6. 最重要的一步： 中间千万不要用铲子翻鱼！会把鱼翻烂的。就一直小火烧着就好了。人可以在旁边享受一下香味
7.  差不多水还有一半的时候就可以出锅了。出锅的时候要小心一点，不要破坏鱼的形象。一般一顿就干掉了，一顿吃不完的话放在冰箱里，结成的鱼冻也很好吃
